This is the absolute best chicken noodle soup around! If you are feeling under the weather or feeling out of balance as our bodies try to adjust to the transition from Summer to Fall, you need the soup! 


The healing benefits of this soup are also felt in the vegetarian version. I recently made The soup and omitted the chicken and chicken broth and replaced them with vegetable broth, chickpeas and additional vegetables like broccoli and zucchini. And wow my body felt amazing. I ate the leftovers for days and continued to feel the benefits. If you try the recipe, please reach out and let me know if you liked it!


Healing Chicken Noodle Soup


Ingredients:

1 tbsp olive oil 

Four medium carrots sliced 

Three stocks celery, halved and sliced 

One medium onion diced 

Two cloves garlic chopped 

1 tsp. Turmeric 

1 tsp fresh thyme leaves or substitute half teaspoon of dried thyme 

1 tsp fresh Rosemary chopped or substitute half teaspoon dried Rosemary 

Half lemon zest and juice 

1.5 tsp. Salt 

Half teaspoon black pepper 

One bay leaf 

Eight cups, chicken broth 

Two to three cups dry egg noodles 

One rotisserie chicken meat removed and shredded 

2 to 3 tbsp fresh parsley optional 

Shredded Parmesan cheese - optional 

Salt and pepper to taste 


1. Heat olive oil and a large pot  over medium heat until hot.

2. Add carrots, celery, onion and saute for around 10 minutes until veggies are soft 

3. And in garlic, turmeric, thyme, Rosemary, lemon zest, salt, pepper, saute over medium heat for 1 to 2 minutes until garlic is fragrant.

4. Stream in chicken broth and add in one bay leaf and juice of half lemon. Stir to combine. 

5. Bring to a boil over medium-high heat 

6. Once a boil is reached, add in two to three cups of noodles and shredded chicken. Bring back to a boil, then cover and turn heat down to low 

7. Simmer over low heat for 10 to 15 minutes, until the pasta is soft. 

8. Remove from heat, taste and additional salt and pepper. Add in chopped parsley and shredded parmesan cheese. 

9. Enjoy!


To make it vegan:


Substitute chicken broth with vegetable broth. 

Substitute rotisserie chicken with one can drained and rinsed chickpeas. Add them into the pot when you add the uncooked pasta.

Add more vegetables like broccoli, zucchini, etc. - optional but delicious and more nutritious. 


To make it gluten-free: 

Cook gluten-free pasta in a second pot. I recommend Bonza rotini made from chickpeas. It packs 20 g of protein and 8 g of fiber in a single serving.


Add cook pasta to the soup at the end when you are ready to eat. 


Note: you can also cook regular pasta separately as well if you plan to keep leftovers and don't want the pasta to soak up all the liquid in the refrigerator.
